I LOVE BRAN MUFFINS.

I think they’ve always been my favorite, even as a kid. If you gave me a choice between a fluffy, bakery style blueberry muffin and a bran muffin slathered with cream cheese, I would choose the bran muffin all day.

There is something about that deep complex wheat flavor paired with super sweet raisins and cinnamon. I also love that they leave me feeling energized and full rather than sluggish after a huge blood sugar spike.

Soaking the mixture is an important step, especially when serving whole wheat (like wheat bran) to toddlers and little kids. Whole grains and especially wheat bran contain phytic acid which binds to nutrients like iron and keeps them from being absorbed. In a balanced diet, this isn’t much of an issue but for little ones it could become a problem because iron needs are so high.

Soaking the muffin mixture overnight deactivates phytic acid (at least partially) and makes the nutrients in whole wheat bran more available to be absorbed. I also love the convenience of whipping up a batch of muffins and having breakfast ready to pop in the oven in the morning.

Serve these for breakfast with scrambled eggs, spread with cream cheese, or for snack with cheese slices and berries.
