Cheesy Zucchini Bites
Cheesy, crispy, packed with veggies. these tots are quickly becoming a favorite snacks (for me and my tots).
We have a few zucchini plants in the garden and we use them up quicker than we grow ‘em. Between this recipe, zucchini bread and muffins, and my zucchini oat chocolate chip cookies, zucchini is in pretty high demand around here (I don’t think anyone has ever said zucchini more often in one sentence).
These can be made in advance for baby/toddler/little kid snacks for the week, they can even be frozen and reheated. I always say I’m going to make a batch for the week but then we end up eating them all in one sitting.
My kids like dipping them in ketchup, marinara, or homemade greek yogurt ranch like in the picture (plain, whole milk greek yogurt with a bit of ranch seasoning mix).
