Fresh Peach Skillet Cake

Sometimes Austin texts me during the day "I have a surprise for you, don't ask what it is". I then spend the rest of the day texting things it could possibly be. I think he tells me not to ask because my guesses are like 1000x more extravagant than what the surprise actually is. Sometimes its new windshield wipers or ant bait for our 7 million houseguests. There was one time when it was a new Macbook which is probably one of the best gifts you can give another human. Just makes those ant bait surprise days that much tougher.

Most recently, the surprise was a ton of seafood. Pounds and pounds of shrimp, fresh salmon, ahi tuna, SHARK...all from a traveling seafood market (aka a freezer truck) near Austin's shop. I actually didn't think anything of this surprise other than "AUSTIN, OUR GROCERY BUDGET!!" but everyone I've mentioned this too has been like "whaaaat...and you ATE it?". I did. And it was GOOD. Like way better than the frozen salmon or shrimp I normally buy. 

No seafood in this skillet cake. But this recipe does have another one of Austin's recent surprises: peaches. A big ole case of different types of the ripest, sweetest peaches ever. I knew we had to eat them fast because of the aforementioned ant buddies but also because perfectly ripe peaches deserve to be eaten ASAP. Ruthie helped a lot by taking a bite out of one, leaving it in the living room, and coming into the kitchen to get another. Aside from that strategy, this is what I came up with inspired by the latest issue of Sauce. It's SO EASY and it's something fun and new to make for breakfast.

WAIT. You guys, what is Amazon Prime day? How come I didn't hear a thing about it before it was suddenly upon us? I'M SO OUT OF IT. I'm actually kinda glad I didn't know about it because apparently everything was super cheap and tempting and I'm in the middle of a NO SPEND YEAR. But I feel like I should have known about it. I think I embarrassed my Grandma by asking what it was when she brought it up.

Back to peaches, you can make this with berries, chopped apples, bananas...whatever you have on hand. It is similar to the three ingredient protein pancakes (oats + egg + banana) but WAY better. Try it this weekend!

Fresh Peach Skillet Cake

Ingredients:

Makes about 2 servings

1 cup milk
3 eggs
1/4 cup sugar
3/4 cup oat flour (1/2 cup regular flour Is delicious too!)
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1/2 teaspoon vanilla

Directions:

Preheat oven to 325 degrees Fahrenheit.

Butter a cast iron (or other oven safe) skillet. 

In a medium bowl, whisk together milk, eggs, sugar, lemon juice, zest, and vanilla. Stir in 1/2 cup oat flour until combined (pulse 1/2 cup raw oats in the food processor to make 1/2 cup oat flour). Sprinkle 2 cups chopped peaches (or any summer fruit!) over the batter and bake until light brown around the edges. Dust with powdered sugar or serve with a little syrup.
